Chicken Pesto Pasta

This was a simple meal we made in VT.

What you need:

  • chicken.
  • pesto sauce.
  • olive oil.
  • pasta.

You can start by making the pasta first, since it’s ok if it sits a bit.  The chicken won’t take long to cook!

Dice or slice or cut the chicken up however you desire.  Splash a little olive oil into the pan (we used a wok) and heat it up.  While it’s cooking you can add spices if you desire.  We didn’t add anything – but things like garlic powder, pepper, basil, oregano, etc could add a little bit of something.

While you’re cooking the chicken it’s time to get the pesto sauce ready.  There’s a few options here.  You can grab a packet of pesto sauce mix, make it completely fresh or do what we did and sorta split the difference.  We used the jar of pesto and added some oil and mixed it in a bowl.  It’ll be added to the pasta and chicken in a big bowl at the end – so it’s up to you if you like it more on the liquid side or thicker.  Once the chicken is done… add the sauce and the chicken to the pasta and there ya go!
